Darn Good Halibut Recipe

1 lb halibut or cod chunks
6 oz fettuccine noodles
1/2 C finely chopped onion
1/2 C finely chopped celery
1/4 C chopped green pepper
1 tsp minced garlic
5 Tbsp butter
1 C sour cream
1 C cottage cheese
1 C grated cheddar cheese
1/4 tsp salt
1/4 C minced parsley or 1 tsp parsley flakes
1/8 tsp pepper
1/2 C soft bread crumbs

Directions:
Cook fish and set aside (can use leftover cooked fish). Cook noodles according to package directions, drain and set aside. In a skillet saute onion, celery, green pepper and garlic in 3 Tbsp of butter for 3 to 5 minutes. In a large mixing bowl, combine sour cream, cottage cheese, cheddar cheese, salt, parsley and pepper. Fold in fish, noodles and sautéed vegetables. Blend thoroughly. Pour mixture into greased 2 quart casserole dish. In a small saucepan melt remaining butter, stir in bread crumbs. Sprinkle over casserole. Cover and bake at 350º for 35 minutes.
