6 green peppers, sliced in half with seeds removed
3 1/2 oz shitake mushrooms
1 Tbsp butter or margarine
8 oz sliced mushrooms
4 C beef broth
1 C uncooked pearl barley
1 1 oz envelope onion soup mix like Lipton Recipe Secrets
Chopped chives (optional)
Shredded cheddar cheese

Directions:
Directions:
Remove and discard stems from shitake mushrooms and slice caps. Heat butter in a medium skillet over medium high heat. Add shitake and sliced mushrooms. Saute 5 minutes stirring occasionally. Combine broth, barley and onion soup mix in a 3 quart casserole; stir in mushrooms. Cover and bake at 350º for 1 hour and 15 minutes, or until moisture is absorbed. Remove casserole form oven and allow to cool slightly. Spoon into pepper halves that are in baking or casserole dishes. Cover and bake at 350º for approximately 30 minutes or until peppers are tender. Sprinkle with cheddar cheese and bake for a few more minutes until cheese is melted. For a heartier meal 1 pound of browned ground turkey can also be added to the mushroom barley mixture.
