4 medium russet potatoes
1/2 c. fat free sour cream
2 oz. shredded mozzarella cheese
2 oz. shredded parmesan cheese
1/3 c. finely chopped sun-dried tomatoes
1/4 c. sliced green onion tops
2 tbs. chopped fresh parsley or cilantro
Pepper and salt to taste

Preheat oven to 375 degrees. Bake potatoes 50 minutes or until tender. Let cool. Cut each potato in half and scoop out pulp (leave about 1/4in. of potato in each half. Cut each half in half again to form quarters. Season the skins with salt and pepper and bake for 15 minutes. This will make them crisp.

Mash potato pulp and stir in sour cream, cheese, tomatoes, green onions and parsley. Place potato mixture into the skins. Bake for 15 minutes in 375 degree oven.©
