4 eggs
1 carrot, cut into 3" julienne strips
5-6 mushrooms, sliced
1/2 onion, sliced
1/2 cup your favorite cheese, grated
2 tbsp butter or spray butter

Directions:
Directions:
Saute the fresh vegetables in butter until cooked.
Spray a full size frying pan with Pam and turn heat to medium. Pour in beaten eggs and milk. Season with salt and pepper. Put lid on and let cook until egg is not runny on top. Take off heat and lay cooked vegetables on one side of the omelet. Sprinkle with cheese and fold side over. Put lid back on until cheese is melted. Cut in half and serve.

Mozzarella or Monterey Jack cheese are my personal favorites. But Cheddar or Colby are good also.
