6 boneless, skinless chicken breasts
1 egg, slightly beaten
1 tbsp. water
1/2 dry bread crumbs
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 cup flour
2 tbsp. margarine or butter
2 tbsp. vegetable oil
2 tbsp. lemon juice
2 tbsp. white wine or chicken broth
chopped fresh parsley
lemon wedges

Directions:

Flatten chicken with meat tenderizer. (fold into wax paper for pounding)
Mix egg and water in a bowl ( I've always used pie tins)
Mix bread crumbs, salt, pepper and garlic powder in another pie tin or bowl.
Coat chicken in flour ( this works well by putting the flour in a ziploc bag and shaking the chicken, piece by piece, in the bag ).
Dip each piece in the egg mixture, then drag through the bread crumb mix.
Heat butter and oil in 12-inch skillet over medium heat. Cook chicken for 8 to 10 mins., turning once, until juice is no longer pink when the center is cut.
Remove chicken from pan; keep warm.
Stir lemon juice and wine into pan drippings. Heat to boiling, pour over the chicken. Sprinkle with chopped fresh parsley and serve with the lemon wedges.
