10 ounces fresh spinach
6 mushroom, sliced
1/2 tomato, chopped
6 slices bacon, diced
4 green onion, chopped
1/2 cup red wine vinegar
2 tablespoons ketchup
1/2 teaspoon salt
1/8 teaspoon pepper

Directions:
Directions:
Wash spinach and pat dry. Tear into pieces. Toss with sliced mushrooms and tomato. Brown bacon in skillet and drain on paper toweling. Stir-fry green onion in drippings 3-5 minutes, until tender. Mix in remaining dressing ingredients, and heat, stirring, about 5 minutes. Return bacon to hot dressing, pour over spinach and toss well. Serve immediately.
