3 pounds broiler-fryer chicken, CUT UP
4 tablespoons butter
3 teaspoons oil
8 ounces mushroom, SLICED
3 teaspoons flour
1 12 oz. can cream of chicken soup
1 cup dry white wine
1 cup water
1/2 cup heavy cream
1 teaspoon salt
1/2 teaspoon tarragon
1/4 teaspoon pepper
1 16 oz. can artichoke hearts, QUARTERED
6 green onion, CHOPPED
2 tablespoons parsley, CHOPPED

Heat butter and oil to medium temperature in a large frying pan, Brown chicken on all sides and remove to baking dish or casserole dish. Saute mushrooms until tender in pan drippings. Stir in flour and add soup, wine and water. Simmer about 10 minutes or until sauce thickens a little. Stir in salt, cream, tarragon and pepper and pour over chicken. Bake uncovered in a 350 over for 1 hour. Mix in artichoke hearts, green onions and parlsey. Continue to bake another 5 minutes or until chicken is done
