1 lb. ground Italian Sausage
1 cup chopped onion
2 garlic cloves, minced
3 (13 3/4 oz) cans beef broth
1/2 cup dry red wine
1 (28 oz.) can crushed tomatoes
1 (28 oz.) can diced tomatoes (undrained)
1 (15 oz.) can tomato sauce
1 cup sliced carrots
1/2 tsp. dried basil
1/2 tsp. dried oregano
1 Tbsp. parsley flakes
1 cup sliced zucchini
9 oz. package of fresh cheese filled tortellini
1 green bell pepper, chopped
Parmesan Cheese, optional

Directions:
Brown and break up ground Italian Sausage in a fry pan. Set aside cooked Italian Sausage and leave drippings in pan. Cook the onion and garlic in the sausage drippings for about 10 minutes. In a large stock pot, add the browned sausage, cooked onions and garlic, beef broth, red wine, crushed tomatoes, diced tomatoes, tomato sauce, carrots, basil, oregano and parsley flakes. Stir well and bring to a boil. Reduce heat and simmer, covered for 30 minutes. After 30 minutes, stir in the zucchini, tortellini and bell pepper. Cover and simmer for another 20 to 25 minutes, until the tortellini are tender. Sprinkle each serving with Parmesan cheese if desired. Enjoy
