3 c. squash
2 eggs
1 c. milk
1 c. grated cheddar cheese
12 crumbled crackers
3/4 stick oleo
3/4 c. chopped onion
salt and pepper

Directions:
Directions:
Cook squash and onion until tender, drain. Stir in eggs, oleo, cheese, salt, pepper and milk. Add milk last so the other items will melt in the hot squash.

Pour in a greased casserole dish and add crackers over the top. Bake at 375º for 40 minutes.

This is best with yellow squash!

Use less milk if you want it more like a quiche.
