4 eggs
2 c. pumpkin (1 - 16 oz. can)
1/2 c. oil
2 c. sugar
2 c. flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
1 tsp vanilla
1 tbsp cream or milk
3 oz cream cheese
6 tbsp butter
3 c. sifted powdered sugar

Directions:

Mix eggs, pumpkin and oil. Sift and add sugar, flour, baking powder, baking soda, cinnamon, and salt to batter. Bake in greased 15 x 10 x 1 pan @ 350º for 30-45 minutes.

Optional: Sprinkle 1 cup chopped nuts on top or in cake mixture before baking.

Frosting: Mix and beat vanilla, cream/milk, cream cheese, butter and powdered sugar with an electic mixer.
