1 large red pepper, finely diced
1 small yellow pepper, finely diced
1 jalapeņo pepper, finely diced
1 T balsamic vinegar
salt
pepper
2 Green onions, minced
1 T fresh minced Cilantro
1 stalk celery, finely chopped
1 shallot, minced
1 large egg beaten
3 T mayonnaise
1/4 tsp cayenne pepper
1/4 tsp black pepper
dash salt

Directions:
Directions:
To make salsa: Combine 1C red pepper, yellow pepper, jalapeņo, vinegar , dash of salt and pepper. Add 1 minced green onion and the cilantro. Set aside.

Place salmon in a large bowl and mash with the back of a spoon. Stir in remaining green onion, red pepper, celery shallot, egg, mayo, cayenne, pepper and a dash of salt. Mix well.

Coat a large skillet with cooking spray and heat over medium

Use about 1/4 cup of salmon mixture for each patty. Cook for about 3 to 4 minutes a side.
