2 cups flour
2 cups sugar
2 tsp baking soda
1 tsp salt
1 1/2 cups oil (liquid)
2 tsp cinnamon
3 cups ground carrots (grated are ok too)
4 eggs

Frosting:
4 oz cream cheese
1/2 cup butter
2 cups powdered sugar
1 tsp vanilla

Directions:
Directions:
Sift dry cake ingredients together. Add oil and eggs beat well. Add carrots and mix well. Pour into 9x13 inch pan and bake at 350º for 40 to 45 minutes. Cool cake before frosting

Frosting:
Beat the cream cheese, 1/2 cup butter, 2 cups powdered sugar and 1 tsp vanilla together. Spread on cooled carrot cake. Sprinkle with nuts if desired.
