Eclair Ring Recipe

1 cup water
1/2 cup butter
1 cup flour
4 eggs
2 pkgs. instant vanilla pudding
2 1/2 cups milk
9 oz. Cool Whip
Chocolate frosting (either homemade or store bought)

Chocolate frosting recipe
2 squares semisweet chocolate
2 Tbsp. butter
2 Tbsp. milk
1 cup powdered sugar

Directions:
Directions:
Heat to a roling boil 1 cup water and 1/2 cup butter. Stir in flour all at once. Stir until dough forms a ball. Remove from heat and beat in eggs, all at once. Spread mixture in an oval ring on cookies sheet. Bake 45 minutes at 400º. When cool, slice off top and fill with mixture of 2 pkgs. vanilla pudding, 2 1/2 cups milk and 9 oz. Cool Whip, folded together. Put on top piece of ring and frost with chocolate frosting.

Chocolate frosting recipe
Mix all ingredients together in saucepan. Cook until mixture is melted. Drizzle frosting on top of Eclair Ring.
