1 qt. cubed, peeled potatoes
1 cup diced celery
1 med. onion, chopped
1 qt. chicken broth
1/4 cup butter
1/4 cup flour
2 tsp. salt
1/2 tsp. pepper
1 qt. milk, scalded
1 cup grated cheddar cheese

Directions:
Directions:
In a kettle combine potatoes, celery, onion and broth. Cook to boiling; cover and reduce heat and simmer until vegetables are tender, about 20 to 30 minutes. Put vegetables through a food mill, blender or processor until smooth. Melt butter in heavy pan, blend in flour , salt and pepper. Gradually stir in milk, cook, stirring until slightly thickened. Stir in potato mixture and broth. Heat to boil. Stir in cheese.
