11 to 12 pounds of pork shoulder or pork butt
casings
5 to 6 small onions chopped
3 Tbsp salt
1 heaping Tbsp pepper
1/4 cup flour
1 cup water
3 heaping Tbsp dry mustard

Directions:
Directions:
Trim off 90% of the fat. You need a little for flavor. Grind meat. Add all the ingredients except casings and mix well with hands. Cover with plastic wrap and leave flavors mix for about 12 to 24 hours. Will stink up your refrigerator. Put in garage if cold enough. Stuff after the 12 to 24 hours.
