1 foil-wrapped turkey - which comes deboned and with both light and dark meat

Roast according to directions on the wrapper. When it should be close to done, handling carefully, open it up about halfway; like a flower. Brush the exposed meat with margarine. Continue to roast uncovered for about another 45 minutes to an hour. It should be at least 180º when checked with a food thermometer. While it is still slightly warm, separate the light meat from the dark.
Place sliced meat in a 9x13 pan which has been sprayed with Pam. Pour approximately 2 cups of the juice from the roasting pan over the sliced meat. (If there aren't 2 cups of juice in the pan, rinse the pan with a little water to create more.) Cover tightly with saran wrap and foil.
To reheat: Leave saran and foil in place. Heat at 350º for approximately 60 - 90 minutes, until it is between 160º and 180º.

This is something that Mom has served for years and can be much easier than roasting the actual bird. She often prepared it the day before the actual dinner, thus saving much of the last minute hassle, while still serving a delicious turkey dinner. She typically makes the dressing in the crockpot separate from the turkey.
