slabs of salmon
brown sugar
ground sea salt or regular salt

Directions:
Directions:
Place layer of salmon in sealable container and cover with brown sugar. Cover sugar with salt. Continue layering fish, brown sugar and salt.
Place in refrigerator for 12-24 hours, turning over every 6 hours.
Rinse fish lightly with water. Dry fish with air until glaze forms. Smoke for 2-3 hours between 190º and 230º.
Adjust time if temp is hotter or cooler.
Cool slowly when done. Serve chilled.
