3 lbs chicken (we use whole cut up or thighs)
1 onion, cut in wedges
8 cloves garlic, crushed or 8 t garlic powder
3 bay leaves
2 t peppercorns
1/2 c white vinegar
3/4 c low sodium soy sauce

Put chicken and onion in crock pot. Mix other ingredients in a bowl and then pour over chicken. Cook 4 to 6 hours on low. Serve with steamed rice.

While living in the Philippines we used to eat this at least once a week. Katie and Sarah loved this served with fish heads and rice. It makes a tangy, salty flavorful chicken. If using regular soy sauce you may want to half the amount and add water so the chicken does not get too salty.
