1 (7 oz) pkg long-grain wild rice
1 (4 oz) pkg crumbled feta cheese (I like more)
1/2 cup chopped red bell pepper (chopped small)
1/2 cup chopped yellow pepper (chopped small)
1/2 cup chopped onion
2/3 cup pine nuts (toasted)
1 (2 oz) jar diced pimentos, drained

Dressing:

1/2 cup olive oil
2 tbsp. tarragon wine vinegar (I use red wine)
1/8 tsp. Pepper

Directions:
Fix rice as instructed on package. Let cool. Combine cheese, peppers, onion, nuts and pimentos in large bowl. Stir in rice. Make dressing and mix with rice. Chill up to 24 hours.
