(This is a very old recipe. The Dorsel’s package has a great new crock pot version that works quite well.)

3 lbs. Pork—Butt or Shoulder or Tip
1 lb. Dorsel’s Pin Head Oatmeal
Onion and salt and pepper to taste.

Directions:
Directions:
Soak oatmeal over night or several hours. Cover and cook Pork, onion, salt and pepper until meat falls off the bone. Take a meat cleaver or heavy knife and chop meat fine or shred finely.

Strain the juice and add the oatmeal. Cook slowly and when oatmeal is finished, add the chopped meat into the oatmeal. Place into loaf pans and cool in refrigerator.

Slice the goetta loaf into ½ inch slices and fry crisply in butter or bacon drippings.
