1-2 lbs skinless Atlantic Salmon
2 lemons
Butter

1 lb penne or shell pasta

2 tsp orange zest
2 cups grape tomatoes- halved
½ cup curly leaf parsley, chopped
12 oz crème fraiche
Sea salt and coarsely ground peppercorns

Directions:
Directions:
Prepare Salmon according to directions for Lemon Roasted Salmon

20 minutes into salmon roasting, prepare pasta according to package directions, drain

Once salmon is done, cut into large, bite-sized pieces

Gently toss cooked pasta with orange zest, tomatoes, parsley, and crème fraiche.
Salt and pepper to taste
Add Salmon last, gently tossing again so that salmon pieces don’t fall apart.

Can be served warm or cold

This fresh tasting pasta has the surprising zing of orange zest and the creaminess of crème fraiche. It sounds more elegant than the preparations make you think and is a good dish to choose when wanting to impress that special guest list.
