1 1/2 c. all-purpose flour
1 Tbsp. sugar
1/2 tsp. baking powder
1/2 tsp. salt
2 c. milk
2 Tbsp. stick margarine or butter, melted
1/2 tsp. vanilla (or almond) flavoring
2 large eggs
stick butter for pan

Directions:
Directions:
Put milk, eggs, melted butter and flavorings into a blender. Slowly add dry ingredients and blend until smooth. Mixture will be thin.
Heat skillet over medium heat. Swirl stick of butter to coat pan and pour 1/4 c. (or slightly more depending on skillet size) into the skillet. Immediately rotate the skillet so it spreads out to a thin film.
Cut until light brown, flip with spatula.
Stack with wax paper. Can be kept warm in the oven or frozen and reheated later.
Fill with jelly, cream cheese, warm fruit,scrambled eggs and cheese, or any other combination, depending on taste.
Roll crepe, cover with whipped cream and powdered sugar, if desired and enjoy.

Seth makes these, but we have to double the batch sometimes! Canned fruit will work, but not as tasty.
