1 lb. Navy beans
1 large onion
chopped carrots (optional)
1/2 lb fat from salt pork bones from roast pork or you can use pork hocks
water
salt and pepper to taste

Directions:
Directions:
Wash beans well and place in large kettle. Cove with a generous supply of water and boil until tender and mushy, Add chopped onion, carrots, diced pork, and fat from roast. Continue to cook until mixture is thickened and well concentrated, adding salt and pepper to season. Remove bones before serving
