1 ham bone
1 ham hock
1 bay leaf
1 tsp. salt
2 qt. water
1 bunch collard greens, washed and finely chopped
2 potatoes, diced
1 sm. onion, chopped
1/2 bell pepper, chopped
2 T. olive oil
1 .14-oz pkg. Vigo Flavoring and Coloring
1 can great northern beans, undrained

Directions:
Directions:
Place ham bone, ham hock, bay leaf and salt in pot with two quarts water. Bring to a boil, then lower heat to medium-low, cover and cook for about forty-five minutes. Add collards and potatoes and continue to cook. Saute onions and bell pepper in olive oil, combine with collards. When collards are tender, add Vigo seasoning and beans. Bring to a boil and cook for five minutes more, uncovered. Remove ham bone and ham hock before serving.
