1 cup finely chopped onion, or to taste
1/2 cup finely diced carrots, or to taste
3/4 stick butter
8 cups water
Bear Creek Cheddar Broccoli soup mix
1/2 lb. Velveeta
1 cup heavy cream
salt & pepper to taste

Directions:
Directions:
In soup pot, saute carrots and onion in butter. Add water and follow package directions by bringing to a rolling boil. Whisk in soup mix. Reduce heat to medium and simmer uncovered 10 minutes, stirring occasionally. Add Velveeta and stir well. Add heavy cream; add salt and pepper to taste.

The soup mix can be found at Albertson's and probably other good supermarkets. This soup freezes well.
