1/2 C minced onion
1/2 C minced celery
2 cloves minced garlic
4 C chicken stock
1 C frozen peas
1 C Bok Choy torn in small pieces

Directions:
Directions:
Saute first three ingredients in a small amount of oil in a soup pan until vegetables are soft. Add broth, peas, and Bok Choy. Bring to a boil and simmer for about 10 minutes on low.
Beat 2 eggs in a separate bowl. Stir soup rapidly in a circular motion and drizzle the eggs into the soup mixture. Cook for 5 minutes or until eggs are cooked.
