1 can (15-1/4 oz) sliced peaches
4 boneless/skinless chicken breasts
2 T olive oil
2 T butter
1 T brown sugar
1 T cider vinegar
1/8 tsp. ground allspice
1 box instant chicken-flavored stuffing mix
Directions:
Directions:
Drain peaches, reserving juice. Add enough water to the juice to measure 1 cup. In a large skillet, brown chicken on both sides in oil. Stir in the peach juice mixture, butter, brown sugar, vinegar, and allspice. Bring to a boil. Reduce heat; cover and simmer for 5 minutes or until chicken juices run clear. Stir in stuffing mix and peaches. Cover and remove from heat. Let stand for 5 minutes or until liquid is absorbed.
