Ingredients: serves about 4 takes about 30 minutes if you are really good:)
Soup Base
4 boneless skinless chicken thighs
1 can 14.5 oz. low sodium chicken broth
1 jalape�o pepper seeded and diced. (add seeds in if you prefer more spicy)
8 cups of water
Garnish
1 cup or 5 oz. of Monterey jack cheese shredded
2 green onions thinly sliced
1 lime cut in wedges
1/4 cup sliced cilantro
1 avocado diced
1 bag of tortilla chips

Directions: |
Directions:*Put 8 cups of water , broth, jalape�o and chicken in a good sized pot
*bring to a rapid boil over medium heat
*turn down to simmer until the chicken is all the way cooked (about 15 min)
While that is cooking prepare garnish
*when chicken is done put just the chicken on a plate to cool for a minute reserving the water in the pot.
*when it is cool enough to handle shred with 2 forks or your fingers
*put the chicken back in the pot
Now this is the fun part.
Put chips in the bottom of each bowl.
Put the cheese on top of the chips
Pour some soup into the bowl to melt the cheese
squeeze some lime juice in the soup

Notes: This is a favorite at our house because everybody can make it just the way they want. It is fun for the kids to help prepare the garnishes while the chicken cooks
