2 cup Sugar
1 cup Shortening
3/4 cup Milk
3 cup Cake Flour
3 teaspoon Baking Powder
pinch of salt
8 Egg Whites beaten
1 teaspoon vanilla

Directions:

Cream sugar and shortening
Mix flour, baking powder and salt
Combine sugar mixture and flour mix, alternating with milk
Fold in beaten egg whites and vanilla
Bake at 325 for 25 minutes

This recipe was used for Christmas Coconut Cake and any other special occasion. It was handed down from Grandma Crump ( Elizabeth Steadman Crump- wife of Dr. Richard Crump, founder of Crump Landing) She lived Nov 25, 1815 to Nov 1, 1891 and was Loraine Farris Wright's Great Grandmother.
Nita Wright Middleton entered the recipe in the June Dairy Month Contest and won at the TN State Competition in the early 1960's.
