1 package instant mashed potatoes
1 kilo ground beef
1 medium onion, chopped
1 large can died tomatoes, undrained
1 can corn
1 can sliced black olives (optional)
1 envelope taco seasoning
1 1/2 tsp. chili powder
1/8 tsp. garlic powder
1 c. shredded cheddar cheese, divided
Directions:
Directions:
Prepare mashed potatoes according to package directions. In a large skillet, cook beef and onion until meat is browned, drain. Add the other ingredients and bring to a boil. Cook and stir for 2 minutes. Transfer to a greased baking dish. Top with 3/4 c. cheese. Spread mashed potatoes over top. Sprinkle with remaining cheese. Bake, uncovered at 350º for 15 minutes or until cheese has melted.
