2 lbs collards (2 bags pre-washed, chopped in bag)
1-2 cups lean chopped ham
1 TBSP crushed red pepper flakes
1/4 to 1/2 cup brown sugar
1/4 cup white vinegar
1/4 cup olive oil
Kosher salt to taste

In a cast iron skillet, place collards and vinegar. On medium heat, covered, steam down. If too many to fit, just steam down the first batch, then add the rest. After they are just steamed down (NOT COOKED), add chopped ham, brown sugar, red pepper flakes, and salt. Finish cooking on low heat until tender, about 15 to 30 minutes.
