1 tbsp olive oil
1 med onion
6 large carrots
ginger root
1 vegetable stock cube
3 cups boiling water
1 tbsp basil
pepper and sea salt

Directions:
Directions:
Heat oil and saute onion, ginger and carrot to soften onion. Mix stock cube with boiling water. Mix all together and simmer 35 min till carrots are soft. Put through food processor to puree and sprinkle with basil and serve
