3/4 c. packed dark brown sugar
1-1/4 c. plus 1 T. all purpose flour - divided
3/4 c. granulated sugar
1/3 c. chopped pecans
1 T. baking powder
1/4 t. salt
1/2 c. 1% low-fat milk
2 T. butter, melted
1-1/2 t. vanilla extract
1-3/4 C. boiling water
2 c. frozen fat-free whipped topping, thawed
Chopped pecans (optional)

Preheat oven to 350º. Combine brown sugar & 1 T. flour in a small bowl. Lightly spoon 1-1/4 c. flour into dry measuring cups; level. Combine with granulated sugar, 1/3 c. pecans, baking powder & salt in a med. bowl. Make a well in center of mixture. Combine milk, butter & vanilla in bowl & add to flour mixture. Stir just until moist. Spread batter into an 8" square baking pan; sprinkle with brown sugar mixture. Pour boiling water over batter (DO NOT STIR). Bake at 350º for 35 min. or pudding is bubbly and cake springs back when touched lightly in the center. Serve warm with whipped topping. Garnish with pecans.
