6 links hot Italian sausage, cut into bite-sized chunks
1/2 green pepper, cut into chunks
1/2 red pepper, cut into chunks
1 lg onion, cut into chunks
3 potatoes, cut into chunks and fried
12 eggs, scrambled until almost set
salt, pepper, hot pepper flakes and oregano

Directions:
Directions:
Saute sausages until cooked, Removed with a slotted spoon and drain on paper towell.
Put peppers and onion in remaining sausage fat and saute until al dent.
Add friend potatoes, return sausages to pan, add seasonings, fold in scrambled eggs and stir until gently set.
Serve with ketchup and/or hot sauce
