4 cups unpeeled, finely chopped apple
1/2 cup unsweetened orange juice, divided
1 1/2 tsp ground cinnamon
1 cup sugar
1/2 cup margarine, softenend
1 8 oz. carton frozen egg substitute, thawed
1/4 cup skin milk
3 cups sifted cake flour
2 tsp baking powder
1/4 tsp salt
2 1/2 tsp vanilla
cooking spray
2 T brown sugar

Directions:
Combine apple, 1/4 cup orange juice and cinnamon in a bowl, stir, set aside
Cream sugar and margarine at med speed until light and fluffy (5 min) Add egg substitute, beat 4 min. at med or until blended.
Combine remaining 2/4 cup orange juice and milk, set aside.
Combine flour, baking powder and salt. With mixer running at low speed, add to creamed mixture alternately with milk mixture, beginning and ending with flour mixture, Stir in vanilla. Pour half of batter in 10-inch tube pan coated with cooking spray. top with half apple mixture, Pour remaining batter into pan, top with remaining apple mixture and sprinkle with brown sugar.
Bake 350º for 1 hr and 10 min. or until wooden pick comes out clean. Coool in pan 10 min. remove from pan and continue to cool on wire rack.
