For Pie Filling:
2 Tbsp flour
1/8 teas salt
3/4 cup sugar
1 egg 1 cup sour cream 1 teas vanilla
2 apples finely chopped
1 pie crust (recipe below)

For Pie Topping:
1/3 cup sugar
1/3 cup flour
1 teas cinnamon
1/4 cup cold butter

For Pie Crust:
12 Tbsp (1 1/2 sticks) very cold unsalted butter
3 cups all-purpose flour
1 teas kosher salt
1 Tbsp sugar
1/3 cup very cold vegetable shortening
6 to 8 Tbsps (about 1/2 cup) ice water
(makes 2 crusts)

For Pie Crust:
Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and form 2 round disks, one for this pie and one to freeze for later use. Wrap one crust in plastic wrap and refrigerate for 30 minutes.
Roll out on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Crimp edges as desired.

For Topping:
Combine all ingredients and mix thoroughly with fingertips. Set aside.

For Pie Filling:
Sift dry ingredients together. Add beaten egg, sour cream and vanilla. Beat until smooth. Add chopped apple and mix well. Pour into pie shell and bake at 400º for 15 minutes. Lower oven temperature to 350º and bake for 30 minutes. Remove pie from oven. Increase oven temperature to 400º. Sprinkle topping evenly over the pie and bake for 15 to 20 more minutes.
