1/4 cup fresh mint
1/2 cup fresh cilantro
1/2 cup fresh basil
1/2 cup low sodium soy sauce
1/2 cup fresh lime juice
1 T minced, peeled gingerroot
2 T molasses
1 T vegetable oil
2 tsp curry powder
1/2 tsp crushed red pepper
4 garlic cloves, minced
2 (10.5 oz) pkg reduced-fat firm tofu
Vegetable cooking spray
6 cups cooked vermicelli
flowering basil (optional)

Directions:
Directions:
Combine first 11 ingredients in a medium bowl, and stir with a wire whisk until blended. Cut each tofu into 1 in cubes. Place tofu in soy sauce mixture and marinate in refrigerator at lease 2-4 hours.
Coat nonstick skillet with cooking spray, place over med-high heat until hot. Remove tofu from marinade, RESERVE MARINADE. Add tofu to skillet cook 2 min. on each side or until browned.
Remove from skillet, set aside.
Add reserved marinade to skillet and bring to a simmer over med-high heat, add pasta and tofu, toss, garnish with flowering basil,

This is the most flavorful dish ever.............
Jenny's version is to use whatever herbs she has on hand, this is a good introduction for someone to tofu because it is soooo goooood we've served it with rice instead of pasta. Also good
