2 T olive oil
1 eggplant, peeled, cut into bite-sized pieces
1 chopped onion
1 chopped tomato
1/2 chopped celery
2 cloves garlic, minced
1 T chopped pimiento olives
1 5 capers
1 T catsup
1 T red wine vinegar or balsamic
1/2 tsp oregano
1/2 tsp red pepper flakes
salt and pepper

Directions:

Coat skillet with cooking spray, add oil, eggplant, onion, celery, garlic, saute until tender 15-20 min.
Stir in remaining ingredients, cook ntil heated thru.

Serve with pita bread, pita chips

Adjust ingredients to your taste........
