4 skinless, bonelss chicken breast halve
Cooking spray
1/4 cup apple butter
1/4 cup spicey brown mustard
1/4 tsp salt
1/4 tsp ground red pepper
black pepper
gorgonzola cheese grits
2 T chopped green onions
Gorgonzola cheese grits:
2 (14oz) can chicken broth.
3/4 cup uncooked quick-cooking grits
1 cup crumbled gorgonzola
1/3 cup sour cream (fat-free)
1/4 tsp nutmet
black pepper

Directions:
Directions:
Preheat oven to 350º
Place each chicken breast half between 2 sheets of pastic wrap, flatten to 1/2 in with rolling pin.
Place chicken breast on baking pan coated with cooking spray.
Combine apple butter, mustard, salt, peppers, brush over chicken. Bake 20 min.
Grits:
Bring broth to a boil in med saucepan, gradually add grits, stirring constantly. Reduce heat to low, simmer, covered for 5 min or until thick. Remove from heat, stir in remaining ingredients.
Spoon grits on plates, top with chicken and sprinkle with green onions. enjoy
