1 lb. mild or hot Italian sausage (casings removed)
1/4 to 1/2 lbs. mushrooms, sliced
2 large cloves garlic, finely minced
1/4 cup Madeira
1 cup whipping cream
1 teas white pepper
1/4 teas freshly ground nutmeg
12 oz dry spinach pasta twists
Freshly grated Parmesan cheese

In a very large frying pan, over medium-high heat, crumble sausage and stir often until meat is well browned. With a slotted spoon, lift out sausage and set aside. Discard all but 2 Tbsps of the drippings.
Add mushrooms and garlic to the pan; cook, stirring often, until mushrooms are golden brown. Add Madeira, scraping brown bits free from the bottom of the pan. Add sausage, cream, pepper and nutmeg. Simmer on high until the sauce is slightly thickened and large, shiny bubbles form, 1 to 2 mins.
Meanwhile, bring well-salted pasta water to a boil. Add pasta and cook, uncovered, until tender but slightly firm to bite. Transfer cooked pasta from water to sauce pan and mix well. Add small amount of pasta water if needed. Serve in warm pasta bowls and top with grated cheese.
