1 tsp vegetable oil
1 cup chopped onion
1/2 tsp dried oregano
1/2 tsp ground cumin
1 garlic clove, minced
6 cups chicken stock or 3 16 oz cans fat-free chicken broth
1 3/4 cups cubed peeled baking potat
1 (15 oz) can chickpeas
2 cups shredded cooked chicken breast
1 cup whole-kernel corn
3/4 tsp salt
1 small zuchini, quartered and sliced about 1 1/2 cups
1 cup diced tomato
1/3 cup fresh cilantro
Toppings: chopped onion, chopped cilantro, sour cream, shredded cheddar cheese, lime wedges

Heat oil in a Dutch over over med-high heat. Add 1 cup onion, saute 3 minutes. Add oregano, cumin and garlic, saute 1 min. Add chicken stock, potato and chickpeas, bring to boil, cook 5 minutes. Add chicken, corn, salt and zucchini. Cook 5 min.Stir in tomato and cilantro, cook 2 minutes.
Ladle into bowls and top with onion, cilantro, sour cream and squeeze lime wedge.
Delicious, use as main course with bread and butter.
