1 cup fat-free sour cream
3 T melted butter
1 lg egg
1/2 cup chopped onion (optional)
1 (15.25 oz) can whole kernel corn, drained
1 (14 1/2 oz) can cream style corn
1 (8 1/2 oz) pkg corn muffin mix
cooking spray

Directions:

Preheat 350º oven
Combine all ingredients in a large bowl; stir well with fork. Pour into 8 inch baking dish, coated with cooking spray.
Bake 350º 1 hour or until pudding is set and lightly browned.
