3/4 cups flour
Pinch of salt
2 Tbls. sugar
1/2 teas. baking powder
2 Eggs
1 pint whole milk

Preheat oven to 450º

Mix the batter ingredients together and let stand approx 1 hour.

Preheat pudding tray until very hot. Pour hot grease from roast in the bottom of the hot pan and add the batter. Cook approx 15 to 20 minutes until crisp and puffy. Do not open the oven door before then or it won't rise.
