1 1/2 lbs beef from roast or steaks
salt & pepper
oil
2 cups chopped onion
1 cup diced carrot
1/2 cup diced celery
1 lb mushrooms
1 tsp garlic
1/4 tsp dried thyme
2 cups beef broth
2 cups chicken broth
2 cups water
1/2 cup pearl or pot barley
3 tbsp fresh parsley

Directions:
Directions:
Sprinkle beef with salt and pepper and brown in oil and set aside. Saute carrots, onions and celery till soft and then add mushrooms and spices add broths with water and barley and beef. Cover and simmer about 1 1/2 hours till beef is tender. Sprinkle with parley before serving.
