2 c. Milk, or substitute 1 c. pureed squash or squash soup
2 T. Flour
2 T. Butter
2 c. Broccoli
1 c. Macaroni
2 c. Cheddar Cheese
Dash nutmeg
Dash cayenne
Salt and Pepper to taste

Directions:
Directions:
Cook pasta. Steam broccoli 5-7 minutes.
Meanwhile, grate cheese and warm milk (with squash if you are using it).
Drain pasta and broccoli and set aside.
Preheat oven to 350º.
Melt butter on medium heat. Add flour and whisk with butter until light brown. Add warm milk. Scald, whisking occasionally. When the roux is almost boiling, remove from heat.
Add cheese, nutmeg, cayenne, salt and pepper. Add macaroni and broccoli, and mix well.
Grease casserole with olive oil and pour in macaroni and broccoli. Bake for 35-40 minutes or until golden brown.
