1 lb Pizzeria pizza dough (also found in most refrigerated sections of your favorite supermarket)
2 garlic cloves, pressed
1 cup (4 oz) shredded mozzarella cheese, divided
3 plum tomatoes, sliced
1 tsp Italian seasoning
1 pkg (3.5 oz) thinly sliced pepperoni
1/4 cup (1 oz) grated fresh Parmesan cheese

Preheat oven to 350ºF. Spray muffin pan will cooking spray. Generously flour a large cutting board and rolling pin. Roll out dough to edges of cutting board. Press garlic over dough and spread evenly.
Grate half of the mozzarella cheese over dough. Arrange thinly sliced tomatoes in a single layer over cheese and sprinkle with Italian seasoning. Arrange pepperoni slices evenly over tomato slices. Grate remaining mozzarella cheese over pepperoni. Starting at longest edge, roll dough up tightly; pinch seam to seal.
Slice roll into 12 1 1/2 inch thick slices. Place slices, cut side up, into cups of muffin pan. Grate Parmesan cheese; sprinkle evenly over rolls.
Bake 30-35 mins or until deep golden brown. Cool 5 minutes before removing from pan. Serve warm.
