1 chipolte pepper chopped
1 Tbsp adobo sauce from chipolte pepper can
2 tsp olive oil
12 oz boneless skinless chicken breast, cut in strips
1 C sliced onion
1 C red bell pepper sliced in strips
2 tsp minced garlic
1/4 tsp thyme
1/4 tsp salt
1 C (4 oz) shredded sharp cheddar cheese
4 Hoagie rolls

Directions:
Heat 1 tsp oil in large frying pan over medium heat. Add chicken; saute 4 minutes, stirring, or until done. Remove chicken from pan. Heat remaining 1 tsp oil in pan over medium high heat. Add onion, bell pepper, garlic and thyme. Saute 4 minutes. Stir in chipolte chile and adobo sauce and cook 30 seconds. Add chicken and salt, cook 1 minute stirring frequently. Remove from heat. Add cheese stirring until cheese melts. Divide mixture among Hoagie rolls.
