1 5 1/2 oz package melba toast
1 egg
1 egg white
1 Tbsp brown or Dijon mustard
1 tsp paprika
1/2 tsp thyme
1/2 tsp sage
1/2 tsp salt
1/2 tsp pepper
1 3 1/2 lb chicken cut into pieces and skinned

Put the Melba toast in a food processor and pulse until coarsely crushed. About 1 1/2 C crumbs. Put crumbs in a flat dish, like a pie pan. Combine egg, egg white, mustard and spices. Whisk together in a bowl large enough to dip chicken pieces into. One piece of chicken at a time, dip in egg mixture; then coat all around with the crumbs. Place the chicken, bone side down on a broiler pan that has been sprayed with no stick spray. Spray each piece of crusted chicken with no stick spray. Bake at 400º until chicken is browned and cooked through, 40 to 45 minutes.

I love fried chicken and this is as close as it gets without frying! It is however a little soggy when cold. And, Mama Sita would be the name Corinne calls me on occasion.
