2 Tbsp. red wine vinegar
2 tsp. minced garlic
1 1/2 tsp. paprika or Portuguese Spices
1/2 tsp. each: salt & pepper
4 rib eye steaks or fillet mignons
1/4 c. olive oil
2 c. chopped onion
1/2 c. diced plum tomatoes
1 bay leaf
1/4 c. tawny port or sherry
3 Tbsp. chopped parsley

Combine 1 Tbsp. vinegar, 1 tsp. garlic, paprika, salt and pepper to form a paste. Rub all over beef and let sit at room temp. for 1 hour. Heat oil in skillet on medium. Cook onion 25 minutes. Add 1 Tbsp. garlic, tomato, 1 Tbsp. vinegar, bay leaf, and port. Simmer, uncovered, 10 minutes. Season to taste and add parsley. Remove from heat. Place 2 large fry pans on hi heat and sprinkle with salt. When very hot, add the beef and cook on hi for 3 - 5 minutes per side for rare. Add onion mixture and heat. Turn steaks to coat.
