Banana Bread Recipe

1 C mashed ripe bananas (3 to 4 medium black bananas)
3/4 C milk
3 Tbps vegetable oil
1 egg
2 1/2 C flour
1 C sugar
3 1/2 tsp baking powder
1 tsp salt
1 C chopped nuts

Directions:
Directions:
In large mixing bowl mash bananas. Mix in liquid ingredients. Then add dry ingredients and mix well. Mix in nuts. Spray one 9x5x3 or two 8x4x2 loaf pans with no stick spray. Pour into pans. Bake at 350º for 55 to 65 minutes, until toothpick inserted in center comes out clean. Cool for a few minutes then remove from pan and allow to continue cooling on rack.

For the holidays I make this either in mini loaf pans or large cans (like progresso soup,baked bean cans) Fill the cans 3/4 full and bake until inserted toothpick comes out clean. I spread top with cream cheese frosting, letting it drizzle down the sides. Then sprinkle with sugar sprinkles. The cans can look like candles using different types of candy as decoration.
